How many photos fit
Every figure comes from the layout engine rather than a rule of thumb. The suggested count is where each photo prints about two inches across, big enough to make out a face from across the room. The minimum is 9 photos; below that, parts of the outline can be left without a photo. A Cane Corso is just a little wider than tall, so a square print gives him room, at 20 × 20″ or 24 × 24″, or go slightly wide for more space around that deep chest.

Questions
Does it work for a black, grey or brindle Corso?
Yes. Black, grey, fawn, brindle or blue, the outline has no color of its own. Your photos carry his coat, so the print looks like him and only him.
The outline has cropped ears. What if his are natural?
That's fine. The drawing shows upright cropped ears because it's the look most people picture for the breed. Plenty of Corsos keep their natural folded ears. Once your photos fill the shape, it reads as your dog, and the ears in the pictures say the rest.
